Is it possible to have more than one static IP for a dedicated server? You know, if you want to host multiple websites but have each one get there own IP adress?

This is the main IP address bounded on the server and used default IP address for all other domains on the server. If you put this IP in the browser's address bar and try to access it, you get server's default page.
Static IP or Dedicated IP :
This is another IP address bounded on the server and assigned for specific or multiple domains under same account. The Dedicated IP can be assigned to addon or subdomain or main domain under specific hosting account. If you put this IP in the browser's address bar and try to access it, you get assigned domain's default page.
Domain needs Dedicated IP address for the Private SSL Certificate installation. Dedicated IP address is also beneficial if shared IP address is blocked by any organization, ISP for the spam or abuse activities.

The best thing about having a static IP is that you can connect to your PC from anywhere in the world. With a static IP, you can also create your own email address using your domain name. A static IP also helps in making the VOIP services more reliable. Overall, having a static IP is beneficial for any business website.
