I know this is weird question.. I launched my website a little early than I should have. although I am building as I go. I want to make it inaccessible on the web until a later date.
Well you could put a fuax folder where the primary index file is and rename the primary file. Or you could just deny access. You can do that through .ttaccess.

How can I do this without destroying the data?
You can put a temporary place holder index file or simply redirect your domain.
You could just remove everything. Of course what the others have suggested is probably easier and takes a little bit less work, so you might go with one of those options.
Well a parking page or a coming soon page will be just enough. That way you can also pass on the message to your visitors to check back your website again
