Hi Garry,
You have Mail Enable Standard version installed on your
VPS server, which is provided as an addon [free] with the Plesk control panel. This standard version of Mail Enable provides less features than what are included in the Professional & Enterprise ones, such as Spam filtering, Bayesian filtering, IMAP, etc etc. If you need further SPAM filtering features available, upgrade the mail server to the next level [both professional & enterprise have a trial period of 60 days] to check the benefits of their filtering methods.
As for now, DNS blacklisting wasn't configured on your VPS, which I've done now. This will cause a major crackdown on the incoming spam as it'd be scanned by the mail server against the DNS blacklisting servers such as DNSBL, SPAMCOP, SPAMHAUS, etc. Spam training needs a particular amount of time to build up it's database to start recognizing spam. Do get back if you notice any change in the incoming spam volumes after these changes or need assistance with upgrading the mail server.
