Having a server for installing game does not has anything to deal with the servers OS. But I would suggest you to opt for Cent OS as its considered as the most stable flavor of Linux. You also have a option of control panel if you choose Cent OS as the OS of your server. This option won't be available if you opt for Ubuntu, as Ubuntu is not compatible with cPanel. cPanel has its own firewall called as CSF Firewall which can be also be used and it will be good as per security aspect. Also having a control panel will help you to manage your server.

Actually it really depends upon what sort of usage you are going to have on your server.
If you got the calculation properly then that you want to run a game server first you should find which game server you want to install
ig you are planed to install gamecp the Centos is the best choice or if you are planed to use TCADMIn that I prefer to use it as it is runngi by windows you should install a windows server

IMO I would suggest that you can definatly go with the CentOS. OS would work perfect fine for you. My personal belief is that of Ubuntu as a desktop Operating System, but that does not mean that the operating system like Ubuntu will not able to do it. Additionally, you could set up CSS without any web admin. You could set it all up through SSH by hand. As there are lot of Conter Strike Servers are set up and are working fine.
