create a php mysqldump script, then create a cron job to set a time and date when you want the script to run. That is ofcourse dependant on you having the ability to create cron jobs with you hosting provider.
There are pleny of tutorials out there, you should be able to google for them |

We had setup a shell script for one of our customer to make separate backup of database daily with date stamp on the mysqldump. I am quite sure that you can do something similar in a php script as well.
