From my point of view you can opt for Debian OS over Ubuntu. Although Debian is more popular between web developers and most probably preferred for gaming servers. I would like to stay with Debian due its stability. On the other hand if you do a default install of both you'll experience Ubuntu is much faster due to less services selected at boot time on a default install. I've used Ubuntu server edition in past and according to my experience Ubuntu server edition is the server version, which rely only on command line, and includes server particular packages in place of desktop components. On the other hand Linux is different than Windows in that there are not various levels of functionality between the desktop and server edition. Alternatively each list is just a starting point. However, in a reality it is hard to figured out difference between both.
