Default VPS Private name servers? How to move web hosts?

Current Hosting

I currently have about 20 sites hosted on a shared host. My primary domain name is also set to act as a private name server for my customers (set up in GoDaddy under 'host summary' so all their domain names point to ns1.mydomain.com and ns2.mydomain.com).

How do I move over to a VPS here?

I'd like to open a VPS here. I'd also like to keep my primary domain the same as on the current shared host.

If I choose a VPS without a Control Panel am I able to use my private name server as I currently do? Would you set this up for me?

I presume I'd then set up Bind etc on the VPS to manage my sites.

Testing

I'd leave my existing primary domain pointing to my old host for a while and get everything set up just using an IP address to access the VPS via SSH and HTTP. Would that work OK?

If I want to test a couple of sites what name servers could I point them at to make them work here? How would I do this?

Once I am ready and set up I'd move all the sites in one go by changing my primary domain "host summary" details on GoDaddy to point here.

Hope that makes sense and sorry if it sounds a bit confused! I hope that someone might be able to clarify for me!
